On-Device AI vs. Cloud AI: What Privacy-Conscious Users Need to Know

When you type a question into ChatGPT, where does it actually go?
The question sounds simple, but the answer is less comfortable than most people imagine.
AI can work in two fundamentally different ways. One processes your information on your device — right where you are, never leaving your hands. The other sends your question to a company's servers, runs it through a model there, and ships a response back. Most people don't know there's a difference, and most haven't made a deliberate choice about it; they're using whichever option happens to be most convenient.

On-device AI means the model lives on your machine. When you ask it something, the question stays put — processed locally, answered locally, with nothing sent anywhere. This is how your phone's autocorrect works, and how voice-to-text functions offline. The computation happens where you are, and the data never moves.
For a while, on-device AI was significantly less capable than its cloud-based counterparts, but that gap has narrowed. Models keep getting more efficient and devices keep getting more powerful, and a well-designed local model can now handle sophisticated tasks without feeling slow or clunky.
The thing that matters most: none of your data — not your question, not your context, not the conversation history — ever leaves your device. When you delete the app, all of that goes with it. There's no server somewhere quietly building a profile of you based on your queries. There's a real distinction between "your data is encrypted" and "your data never leaves your device."
Encrypted cloud AI means your question is encoded so the company theoretically can't read it — but the company still has it, along with the metadata around it. Encryption can be broken, keys can be compromised, and "encrypted in transit" isn't the same as encrypted at rest on the company's servers.
This matters specifically for personal information. A doctor organising patient notes with a cloud-based AI is putting that data on someone else's infrastructure. A freelancer processing financial records through a cloud assistant is trusting a company's security practices with their clients' information. With on-device processing, that exposure simply doesn't exist; the data has nowhere to leak from.
When Privacy Promises Change
The risks of cloud processing go beyond the obvious data-breach scenario. Company policies change. A privacy-respecting AI company can get acquired by one that isn't. Governments can request access to company AI models and the queries that flowed through them. Terms of service get updated, and data uploaded under one set of privacy promises can quietly be repurposed years later when priorities shift.
